Local products – Ibores cheese
“Ibores” cheese is made from raw goat’s milk and is matured for at least 60 days. There are also factories with a small production capacity which only produce homemade cheese from the milk of their own stock farm. This cheese can be considered homemade as it requires a maturing period of at least 100 days.
“Ibores” cheese is fatty in nature and is exclusively produced from raw milk of the serrana, verata, and retinta breeds of goats and the crosses between them.
The presentation of the “Ibores” cheese product may be with its natural rind, with paprika, or in olive oil.
