Extremadura kid goat comes from various breeds: Verata, Retinta, Florida, Malagueña, Murciano-Granadina, Blanca-Andaluza, Cabra de Las Mestas (or Serrana), and Payoya.
The certified product types are:
Cabrito de Extremadura: Fed on mother’s milk, with their diet supplemented by cereals and legumes until weaning. The meat is reddish in color, very tender, and has a very smooth texture.
Cabrito Lechal de Extremadura: Fed exclusively on mother’s milk. The meat is pale pink in color. It is very tender, highly succulent, and has a very smooth texture.
